The grapes are sorted while on the conveyor belt, then destemmed and gently pressed then fed by gravity into the fermentation tank. Fermentation with natural yeasts in open topped wooden fermenters. Skin maceration lasts 26 days, with regular punching down of the cap. The wine then remained 18 months sur lie This wine displays all the fine aromatic characteristics of the best Nebbiolo: violets, cherries, raspberries, wild herbs and hints of tar. It has powerful savoury flavours on the palate with lots of minerality, mature tannins and high acidity. Long, elegant and complex on the finish. Peking duck, Korean BBQ

This is a small boutique winery situated on eight hectares of vines. For Paolo and Luca De Marchi, bringing the wines of North Piedmont back into the limelight means making them live again in full respect of the district’s traditions and the knowledge and methods of times gone by. This small winery continues the centuries old tradition of vinification and fermenting in broad and shallow completely open wooden tanks and then maturing the wine in barrels and casks.
