Podere Sapaio is a winery in Bolgheri, Tuscany established in 1999. We have 25 hectares vine in biological agriculture. Our two wines Volpolo Bolgheri D.O.C. and Sapaio Bolgheri Superiore are both Cabernet Sauvignon blend and they are produced strictly with grapes grown in our vines. In the cellar, quality of production combines with technical expertise. Our technique aims at the harmonious play between nature and human beings.
Wine Making:
Alcoholic fermentation: under controlled temperature in steel tanks with long maceration on the grape marks; Malo-lactic fermentation: in barriques; 18 months aging in tonneaux and one year bottle aging before commercialization.
