Drappier Clarevallis Extra Brut 香檳以產自 Urville 丘陵的葡萄釀造而成,這些葡萄園始建於西多會時期,採用有機耕作方式。Clarevallis 這個名字是聖伯納德賜予他所建修道院的,這款香檳正是這片自12世紀以來就由人類精心守護的土地和風景的真實寫照。

這款香檳由75%的Pinot Noir、10%的Pinot Meunier、10%的Chardonnay和5%的Blanc Vrai葡萄混釀而成。葡萄生長在侏羅紀Kimmeridgian石灰岩土壤中,採用有機種植方式,部分葡萄園甚至使用馬匹耕作。釀造過程僅選用第一次壓榨的葡萄汁,採用重力澄清和乳酸發酵,使用酒莊自己的有機酒泥,不經過濾和脫色,亞硫酸鹽添加量非常低。

Drappier Clarevallis Extra Brut 呈現金灰色,氣泡非常細膩且持久。香氣中帶有接骨木和紫羅蘭的氣息,石灰岩的礦物質感被Pinot Noir葡萄的果肉柔化。低調的甜度與可愛的苦味風味之間達到和諧的平衡。

建議在7°C時享用,可作為開胃酒或搭配餐食,尤其適合搭配醃漬魚類,如紅柚鯛魚。也可以搭配夏日沙拉、琵琶蝦和脆蔬菜。

The Drappier Clarevallis Extra Brut champagne is made with grapes from the Urville hillsides, where the vineyards were planted during the Cistercian period and are now organically farmed. The name Clarevallis was given by Saint Bernard to the abbey he founded, and this champagne is a true reflection of the landscape and the land that humankind has been tending here since the 12th century.

This champagne is a blend of 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay, and 5% Blanc Vrai grapes. The grapes are grown in Jurassic Kimmeridgian limestone soil, using organic farming practices, with some vineyards even tilled using horses. The vinification process uses only the first press, gravity clarification, and malolactic fermentation. The champagne is aged on organic lees from the estate, without filtration or discoloration, and with very low sulphite additions.

The Drappier Clarevallis Extra Brut displays a golden-grey color with very fine and persistent bubbles. The aroma features notes of elderberry and violet, while the limestone minerality is softened by the Pinot Noir grape pulp. The champagne achieves a harmonious balance between the discreet dosage and the lovely bitter flavors.

It is recommended to enjoy this champagne at 7°C, either as an aperitif or paired with meals, especially marinated fish dishes like sea bream with grapefruit. It also pairs well with fresh summer salads, langoustines, and crunchy vegetables.
