The Drappier Blanc de Blancs Brut champagne is primarily crafted from Chardonnay grapes grown on the Jurassic Kimmerdigian limestone soil of the Côte des Bar, imparting a distinctive mineral character. A touch of Blanc Vrai grapes complements this unique Blanc de Blancs with a hint of generosity, a trait shared by all Drappier cuvées.
This champagne is a blend of 95% Chardonnay and 5% Blanc Vrai grapes. The grapes are grown in Jurassic Kimmeridgian limestone and chalk soils, with the house embracing a sustainable and organic ethos. The vinification process employs mechanical low-pressure presses, using only the first press, gravity clarification, natural settling, and malolactic fermentation without filtration. 5% of the wines are matured in oak barrels. The champagne is aged on the lees for 36 months with very low sulphite additions. The Chardonnay liqueur used in the dosage is aged in oak.
On the nose, this champagne evokes white peach and pear, along with more floral notes such as peony. On the palate, it is a mineral-driven champagne with subtle biscuit notes, a creamy texture, and a supple, seductive character.
At the table, Drappier Blanc de Blancs Brut pairs exceptionally well with white meat, chilled smoked salmon with citrus fruits, and tagliatelle with scallops. It is recommended to serve at 7°C.
