Description:
The colour is pale gold or greeny-gold. The nose is very fresh, lively and mineral with flint, green apple, lemon, underbrush and field mushroom. Notes of lime-flower, mint, and acacia occur frequently, as do aromas of liquorice and freshly- cut hay. On the palate, these aromas retain their freshness for an extended period. Perky and full of juice, the attack is intense. Long and likeable persistence leads to a smooth and serene finish. Very dry and impeccably delicate, Chablis has a unique and readily recognisable personality.

Thierry Laffay took over the family vineyards in 1986. He is one of the pioneers of organic viticulture in Chablis – yields are restricted, harvest is by hand, uses of pesticides and herbicides are avoided to let the vines build up their own resistance as far as possible. The domaine issues a full range of Chablis, from Petit Chabis and Chablis A.C., through the 1er Crus of Vaillons, Mont de Milieu, etc. The wines possess a staunch minerality, bright framing acidity, and lively citrus aromas and flavours. Thierry-Laffay wines directly translate the essence and unique identity of each vineyard into thrilling wines of unabashed verve and elegance.
