Thierry Laffay took over the family vineyards in 1986. He is one of the pioneers of organic viticulture in Chablis – yields are restricted, harvest is by hand, uses of pesticides and herbicides are avoided to let the vines build up their own resistance as far as possible. The domaine issues a full range of Chablis, from Petit Chabis and Chablis A.C., through the 1er Crus of Vaillons, Mont de Milieu, etc. The wines possess a staunch minerality, bright framing acidity, and lively citrus aromas and flavours.
