Description:
Pure green-gold in colour, evolving to a light yellow with age. A wine with fine keeping properties (10-15 years, sometimes more). Intense mineral scents ( int) but with room for lime-flowers, dried fruits, almond and a discreet touch of honey. Field mushroom gives a strongly characteristic touch to this wine. On the palate, acidity and fat are in perfect balance, as are liveliness and dryness. It has all the charm of an inimitable and authentic wine. This is the jewel in the crown of the Chablis range, richly nuanced by the variations in each climat.

Thierry Laffay took over the family vineyards in 1986. He is one of the pioneers of organic viticulture in Chablis – yields are restricted, harvest is by hand, uses of pesticides and herbicides are avoided to let the vines build up their own resistance as far as possible. The domaine issues a full range of Chablis, from Petit Chabis and Chablis A.C., through the 1er Crus of Vaillons, Mont de Milieu, etc. The wines possess a staunch minerality, bright framing acidity, and lively citrus aromas and flavours. Thierry-Laffay wines directly translate the essence and unique identity of each vineyard into thrilling wines of unabashed verve and elegance.
