Corte Volponi Amarone della Valpolicella Classico DOCG 2018 is a masterpiece crafted from autochthonous grape varieties, including 40% Corvinone, 35% Corvina, 20% Rondinella, and 5% Oseleta. The vines are meticulously trained using the traditional Pergola Veronese system, with a plant density of 3,200 vines per hectare.
The grapes are hand-picked during the last week of September, ensuring only the ripest and healthiest bunches are selected. The harvest is carried out using small 5 kg trays to maintain the integrity of the fruit. The grapes then undergo a natural drying process known as "Appassimento" in well-ventilated rooms, where they are laid out in single layers on trays. This process typically takes 100-120 days, depending on the vintage.
Vinification begins in January, following the natural outdoor temperatures. The grapes are destemmed, gently pressed, and subjected to cold maceration for 8-10 days. The temperature is then increased to 24-26°C to facilitate yeast fermentation.
The aging process is split evenly between new French oak barriques and second-passage large oak barrels. Following this, the wine undergoes a minimum of 6 months of bottle refinement.
