Vinification: Old vine Pinot Noir & Chardonnay, handpicked and selected. In the winery the grapes are collected down before crushing and only the free fall juice Is being collected. First and second fermentation with indigenous natural yeast. After the first fermentation, the Chardonnay spends 7 months in French Oak, the Pinot Noir instead stays to mature in stainless steel until Summer after harvest, then both varietals are blended and bottled for the second fermentation. Ageing: 6 Years on lees in bottle Dosage at degorgement:None The Spumante Special Cuveè Pas Dosé Riserva of the Contratto winery is a sparkling wine obtained by the best Pinot Nero grapes with a small addition of Chardonnay ones, grown in the oldest vines of the property. After about 6 years of aging on its lees, it shows a splendid golden yellow and fine and persistent bubbles. In the nose it develops a complex and harmonious bouquet, with hints of ripe fruit on a slightly spicy background. In the mouth, it is intense with a good acidity and an aftertaste of apple and custard. It is ideal to drink fresh in combination with elaborate fish courses. Steam Fish, Grilled Fish
酒莊:
Contratto has over 145 years of distinguished history. The winery was the first in Italy to make vintage ""metodo classico"" sparkling wine. In the 1920s and 1930s, it was the Contratto bubbles that were requested by the Vatican and the royal houses of Europe. The vinification is done according to classic method. After the initial alcoholic fermentation the base wines are vinified separately, then are aged for 8 months in temperature-controlled stainless steel vats, with bottle aging on the lees for a minimum of 3 years.
