Contemporary Craftsmanship: Haute Couture Vinification
Champagne Lallier's winemaking process, termed "Haute Couture Vinification," involves:
- Fragmented vinification in small-volume stainless-steel tanks and 228L wooden barrels
- Fermentation with homemade yeasts
- Careful management of malolactic fermentation
- Extended aging on lees
- Low dosage levels to respect the intrinsic qualities of each blend

The heart of Lallier's signature style, R.019 balances Freshness, Purity, Depth, and Intensity. Sourced from over 50 crus within the Champagne region, this blend of 55% Pinot Noir and 45% Chardonnay offers a light golden color with jade reflections, fresh citrus and white fruit notes on the nose, and a palate marked by frank intensity and delicate fruitiness.
Blanc de Blancs
A blend of 100% Chardonnay from the Grand Crus of Aÿ and Côte des Blancs, this champagne showcases floral notes of hawthorn and acacia, complemented by hints of hazelnut and praline. The palate is a harmonious dance of purity, freshness, and mineral tension, finishing with citrusy notes of lemon and yuzu.
Blanc de Noirs
