The winemaking process is a testament to precision and care. Chardonnay grapes are lightly pressed and fermented to complete dryness, followed by wild malolactic fermentation to add complexity. The Pinot Noir grapes are handled with extreme delicacy to preserve their subtle characteristics without imparting too much color. After 14 months of aging, the base wines are skillfully blended and undergo secondary fermentation, resulting in a naturally effervescent wine with a delicate, fine mousse.
